Healthy Banana Oat Pancakes:
Pancakes in the morning are one of the most common breakfast foods but, they typically are filled with lots of sugar and made by a box mixture. These pancakes are fast, healthier, and delicious.
Serves 8 small pancakes
Ingredients:
~ 1 large banana
~ 2 eggs, 1 egg white
~ 1/2 cup almond milk
~ 1 1/2 cup rolled/quick oats
~ 2 tbsp. maple syrup
~ 2 tsp. baking powder
~ 1 tsp. vanilla extract
~ pinch of Himalayan salt
Directions:
~ Place the ingredients in a blender and blend until smooth.
~ Use a non-stick pan or grease your frying pan with olive oil. Over medium-low heat, use a ladle to scoop the mix into the pan. Let the mix sit until the center begins to bubble. Gently flip the pancake and let the other side cook for about 3-4 minutes.
~ When the pancake is light brown and fluffy, remove from the pan and serve with maple syrup. For a more natural syrup, I used homemade.
